An Ode to the Animal, the Land, and the Craft
Join us at Potager – A Kitchen Garden for an intimate degustation that honours the whole beast.
In collaboration with Bellingdale Beef, this tasting journey pays tribute to the craft and care behind our food — beginning with the noble offals and moving, in natural order, from head to tail.
At its heart lies the exceptional Speckle Park cattle of Bellingdale Farm, raised on Tweed Valley pastures with meticulous care, then finished to enhance natural marbling and depth of flavour. Still rare to find on restaurant menus, Speckle Park beef is celebrated for its rich, distinctive taste, fine marbling, and clean, buttery melt — a flavour both rare and remarkable.
The Journey
From cheek to brisket, flank to rump, and finally tail and marrow, each course explores the anatomy of flavour.
The savoury journey concludes where it began — with what remains of the beast: bone, fat, and memory — transformed into something sweet and unexpected.
Expect an elegant progression of seven courses, thoughtfully paired with drinks, celebrating nose-to-tail dining through the artistry of Potager’s kitchen.
